Vegan Dirty Rice Recipe

Made this over the weekend. Very tasty!

Ingredients (measurements are approximate)

Arborio rice
1 qt vegetable stock / broth
Todd’s Dirt Cajun seasoning (or similar cajun spice mix)
1 yellow onion, diced
1/2 green pepper, diced
1/2 red pepper, diced
1/4 cup diced carrots
1/2 cup diced celery
1/2 lb Morningstar grillers vegan ground beef
3 cloves garlic
Olive oil

  1. Place Arborio rice in rice cooker. Add vegetable stock to cover. Add 1-2 tbsp of Todd’s Dirt cajun seasoning (or, to taste)
  2. When the rice is nearing the end of its cook cycle, stir-fry remaining ingredients in olive oil. Add additional tbsp of Dirt cajun seasoning, 1 tsp salt, and additional spices to taste.
  3. Combine veggie stir fry with rice in rice cooker. Mix well. Serve immediately with hot sauce to garnish.
